i5 is basically sufficient for normal usage i.e. office work, web surfing, watching movies etc.
At this stage, gaming performance is still not governed much by the processor although some games are slowly being optimized for quad core processors

It all depends on your budget, if you can fork out more for a quad core i7 (especially so for a
gaming laptop that is 15.6" or larger, then its advisable to get one)
having a quad core i7 will help alot for
insane multitasking. Opening multiple browsers, watching movies at the same time is not considered as multitasking for the case of i7

Usually people would get an i7 for programs that involve intensive calculations or renderings.
Display quality is not directly related to the CPU
