just use stock rom 1st, if you satisfy it then stay for it
else try custom rom
if try custom rom, try those base on stock rom 1st

depends, my contacts are always in the could with google. i dont sms people, my whatsapp is auto backup every 4am so even if i forget to backup, it wont be total lost,
that all i need to worry to backup

for apps
if i stay on a rom more than 3 days i redo my titanium, with batch backup what dont feel any hassle,

for theme, well, since i always jumping, i dont feel the need to do much theming, just slap on a happy wallpaper, use apex, change the sms to whatsapp, stock browser to firefox shortcut.

im done....

with aokp you get much more fun, with theming cause all can be set in the system option

though i do miss samsung camera, but i feel okay with 3rd party apps such as camera zoom, camera 360, aosp camera mod, the picture are just for memory to look at and also for instagram/twitter, as long as it look nice in small screen or for avatar, i dont think you see much of different
