Does anyone know If I can purchase and hold off the subscription from running till I'm really ready to play it? Like maybe say If I wanna buy it now but only play next month.

I think you should be able to play it later on after you purchase it now. As the items which you purchased is the digital key which enable you to activate the game you purchased. Playtime will counted once you activated your game by using the digital key which provided to you after the purchase.
