It's actually handmade dough (flour, egg , water , salt), the grind it thru a machine to make it flat den go thru the same machine to make it either look like mee shape or kiewtiew .. can choose thickness, some prefer it 'cubit style (homemade)' usually it's served with mince pork, fried anchovies, Chinese Black those thin thin crispy mushroom

yeapie... you forgotten the fact that pasta originated from China once upon a time

yeah .. it's use to make many noodles... but i like to eat this type of pan mee

the hard part will be the way to mix it together in the right way using the right amount of strength so the noodle is chewy and not coarse...

you no put the fried anchovies in it??
