seems like there is a lot of debate on honey here. I've been in this trade for almost 4 years, I only harvest raw wild honey from the jungle. There is few thing I can tell you about the local honey:
1. Water content is around 20% due to our forest is tropical rain forest we receive rains thru out the years, proven by BP food lab.
2. Will not attracts ant is not 100% true, it will only the grey and small ant which normally we call them sugar ant. Larger ant tend to stay away cuz of the fermentation in the honey will make their stomach bloated after they consume.
3. Will not freeze in the freezer, yes it will not freeze even u put inside for few days but if more than 6 months it will still get frozen still but not as easy as fake honey which normally frozen in 1 day.
4. Fire testing, normal honey which is not pure can be easy charred compare to pure raw honey. I always use my own honey for BBQ and the result is phenomenon the chicken wun charred easily. You can do fire testing with both pure and impure honey and u will see the result.
5. pure honey is smooth, few drops of honey on your hand and start rubbing. Pure honey wun change consistency easily and remain slippery, on the other hand sugar or syrup base honey will tent to get sticky and become course as the sugar starting to forms.
6. Honey should be slight acidic and taste slight sour the reading should be below 40 meq/kg by lab test standard.
7. No matter who much you swallow, pure honey normally will go down easy on your throat, if its too hard to go down and u feel your throat is burning then its probably loaded with syrup.
8. Only honest honey supplier will have pollens, wax and hive residues left inside the bottle and yes due to acidic nature and fermentation factor, all raw honey will be pack using glass bottle only.
9. Honey has been mention in ancient eygpt medical records, ancient chinese practitioner, bibles and even Al-Quran about the health benefits of it. Yes it has been use to treat wounds, cancer, SARS and etc.
10. Wild honey is as good as organic honey so dun get hype of getting organic honey by paying extra. Wild honey is already natural enough
Locals honey with glass bottle packaging, anything belows RM50 is almost impossible to get pure content. Tualang is range from RM120 onwards per kilo in Terrengganu road side. A lot of local harvester selling at RM170 per kilo. Cameron highland honey is very suspicious, as there is news article reported that its being supply from china plus the pollution the Orang Asli is rarely harvest honey due to the bees is moving away from pesticide.
Please note that this is my experience, I might or might not be correct. The information here you can google online or check with wild honey harvester.

my dad bought honey before from perak. The color isn't your typical gold color sort of honey. It's more brownish and yea it taste a bit sour.
