Run your media scanner it should appear once the scan complete.

Difference between TB and nandroid backup you can read on first page but basically TB backup apps and data while nandroid backup whole rom.

After backup you can start flashing

Then you should read more on it. If wanna try custom rom I would recommend checkrom or hyperdroid for first timers as they are closer to stock.

What are you trying to do mate? the kitchen app is a portal for you to select your prefer kernel theme radio and etc. before downloading, please read the description of each item. make sure its compatible with your rom version.
What i did before, i download the add on files but i flash it later by manually flash it via recovery.

The item in the kitchen is just additional stuff. You do not need to flash everything on each tab. Just flash what you want. Like themes, maybe some modem work better for you, or some mod that you want like call recording etc. The rom can run fine without the stuff from the kitchen, so its up to the user to customize his phone to his liking.

Yes.Download and apply, it should auto reboot and install if the kernel support it. Otherwise, download and apply manually through CWM. But please please make nandroid backup before attempting to flash any themes.

Its a good practice to at least have 2 or 3 nandroid backup just in case one or the other fail to restore or corrupted.

I still keep my first nandroid just in case want to get back to stock.
