Yeah you should be rooted. And yeah that's a different method. Tell you what, try downloading an app that requires root and see when you launch if it prompts you for root. ROM = term loosely used for operating system. When we say flash ROM, we're generally referring to a custom ROM, i.e still Android but modified/developed by someone/people.
You have the one that looks like stock : CynogenMod
You have the one that looks, erm, abit like iPhone : MIUI
And you have ROMs based on samsung's ROM : Checkrom, Turkbey, etc
Kernel = The jazz which manages the internals of your phone, like your CPU and what nots (excluding connection, that's handled by modem/baseband).
So once again, ppl out there "cook" kernels up based on existing kernel codes of samsung and they add/modify stuff. Purpose of flashing this is for better peformance/battery life
