u can defeat at NG+, but if u want defeat it for the 1st time, u choose fire bomb as a gift at player creation screen. 

u got crappy weapon during 1st encounter with the boss. Onli if escape the boss room, then u got all ur class weapon.
my best attempt on the boss is half of his life, then i died u need focus around 1 hour to kill him

yes asylum demon the big ass lol... u sure u beat him with broken sword or ur normal fisting? if u got other weapon, mean thts 2nd attempt 

btw, u use keyboard n mouse?? the game need to use gamepad coz it direct ported from console, so m&k not so nice to use in this game...... n imho this game is the most accurate 3d person game control i ever played yet... 

put Str to 14 onli, n pump dex as mush as u like... for uchigatana u need 14dex, iaito 20dex atleast to use...

dex will make pyro/spell animation more faster, but cap at 45dex

as rule of thumb, u should pump stamina at 40 coz is ur block, dodge and atk meter.

stat priority: fill ur feveret weapon requirement > stamina 40 > hp or weapon scaling stat
