at what aperture are these photos shot at?

Usually studio kind of shots you can use like f/5.6 - f/8 because you can get sharper image (f/8 is the best), and no need to care about ambient light, since you have a clean background and also a well controlled light source from the lighting equipment.

but i see most of the pic, only face sharp, the rest a little bokeh like tat

not necessarily your aperture, could be the focal length as well. Even at f/5.6, the depth of field can be quite shallow if you shoot on a tele range.
