Once you upgrade to 5.1, there is no way to downgrade to 5.0.1. It doesn't matter if you saved the SHSH. There is no path to downgrade to 5.0.1
Only those on A4 chip and older can downgrade and they can only downgrade to iOS 4.x and only if they saved the 4.xx SHSH |

Whatever you do, just make sure you do a full backup of your iPhone before updating.
I believe if you do the OTA update, you won't lose anything. If you do a full restore to 5.1, then you will need to restore your backup after the update. |

My iPhone 4s on 5.0.1 will only budge 1% if it is on standby mode when I go to sleep. That is with 3G on.
