They're all different takes on the 4X genre.
Galactic Civilization is the classical take of 4X games in space. It plays almost exactly like Civilizations, with you conquering the galaxy through any means necessary. The best part of the game has to be the ship designer feature.

The AI here is very intelligent and curbstomp you if you're not careful.
Sword of the Stars can be best considered a hybrid 4X/RTS game. The empire management are rather simplified compared to other 4Xs, but it makes up for it by the different races that it offers (each races play very differently) as well as real-time tactical battles. The tech tree is also randomised each time you play, giving you a different experience each time.
I haven't played Sins of the Solar Empire, but I heard it is SotS-like in both management and tactical battles, except with a smaller scale and bigger fleets. Apparently also balanced better, but I wouldn't know about that.
