Your hands do not act like a thermometer. And no you wont suffer any burns or getting uncomfortable during use. It only gets uncomfortable during charging, even then it's around 40 degrees celsius only. In general, all phone heat up during more intense usage. Why do you think the Evo will be exempted from this issue?

Official firmware wise, I would say both manufacturers are equal. Look at the Galaxy S, the previous flagship, already being updated a few times. HTC has also updated their Desire to Gingerbread. Custom development are happening fast for both as well.

Personally, I used Chainfire Root to root my device. Instructions available on the first page as well. Just visit Chainfire's thread on XDA and everything is explained clearly there. Yes you must shut down kies. Odin won't work with Kies in the background.
