The S-OFF is not permanent and can be reverted back to stock rom 1st, then S-ON the device back to it's shipped factory state for warranty purposes or to use the official S-OFF when it is released.

Sometimes we do need to flash radio for a better signal of wifi or whatever related with it. With a good radio, sometimes you can save your battery juice too. The cheif like mike always recommends the radio. Just follow his guide. Flashing radio through adb is easy though.
