1. Resilience ratings. Your opponent may have better PvP gear than you.
2. Heirloom. These are the gears that are better than any gear you can get in your quests/dungeon. Only those have 85 have access to these.
3. Balance. Some class is just totally sux against another class, prior to level x.
Profession give you certain bonus, on top of giving you a certain gold earning capability. Just google and you can always have more information about it. As starter, I recommend you level up your gathering profession (mining/herbalism/skinning), if you have any.
