Saw this picture online. I like the dynamic color range of this. Does anyone know how is it done? Is it mainly through post-processing (photoshop) or camera itself?

As far as I am concern either post processing or through camera.

You can adjust the color settings from the camera. Or having a better lens would provide a better contrast (ie more saturated/like you said, dynamic color range)

Depending on which M4/3, but yes it is possible. Even if is not M4/3, like Nex7 or such, can attain such IQ. And as Kenary820 said, with minor tone adjustment
