their meaning that u need to upgrade to ios 5.0.1, this is because jb team is doing it for the ios 5.0.1, while apple is developing new update in ios which is ios 5.1..so after that they will no longer chances to download 5.0.1 so here they are recommending us to upgrade first, so u wont miss the jb next

after signing ios 5.1, u are no longer can update to 5.0.1
cause every time u plugged in, they will ask you to update to the newest version, u cant choose!
