When updating, no matter automated or manually, itunes will verify the ios you're installing with apple own server. So if apple no longer signs the older ios, u install until u die also u wont get it successful. Only exception is for A4 devices with shsh saved whereby u can use TU to "cheat" itunes into signing your ios installation with the saved shsh. Even that is for ios 4.3.5 and below. Starting with ios5, shsh method has been made redundant by apple by changing their codings. Likewise to say, Ipad2 and other A5 devices cant use shsh method anymore.

I believe even u download 5.0.1 to ur pc and not upgrade it, when apple stop signing 5.0.1 u still not able to upgrade later on.. correct me if im wrong

As far as I know, the moment they release the IOS, meaning that they have signed it. ==
For update ios, itunes on your pc will verify ur installation /update/restore with apple server whether your ios file is the correct ios for your device (diff installation file for iphone 3gs, 4, 4s, ipad1 or 2, 3g or non 3g, ipod touch) and whether it's the latest version.
If it is latest and correct, apple will "sign" (approve) and itunes will finalise the installation. If it's not the latest, itunes will give u an error code and installation is failed. Currently most updated is ios5.0.1, so if u update now to 5.0.1, it will be successful, but if u try to install 5.0, it will fail.
Same goes if when apple release 5.1, if u try install 5.0.1, it'll fail, simply bcoz apple stop sign approval for 5.0.1 and only sign approval for 5.1. Understand?
