I have a question here. Say if my statement date is 28th and if my first card use of the calendar month is on 30th July (weekend) with spending RM1k, and I use another RM1k in August weekends, would I be getting RM50 x 2 for July and August cashback rebate for Amex?

Ask MBB to recalculate your cash rebate if you are not satisfy with the amount. I did it and they will recalculate it.
