Do it like the exhibition; put a label saying "Please Do Not Touch" or "Once Broken Considered Sold".

I think "Once Broken Go Find One Exactly Like This To Repay Me" more suitable

One of the most effective method is to let them know how expensive the gunpla is, and how fragile it can be. Once they know, most probably they will even exercise extra caution when passing by your desk

Did the above to my relatives (till the point the parents prohibit their kids from touching my gunplas) and officemates
