smile.gif You can get salmon cuts from markets but fillets are more western. You can try cold storage or maybe Lee Frozen in Jalan Rotan, Kg.Attap. Depends on the quantity, you can actually ask the fish monger in the market to fillet instead of cutting into cutlets if you order the whole fish. A whole salmon usually weighs 4 kilos plus minus 300 gms. Those at the market are probably frozen ones and those serve in fine dining are usually air flown, so there's a distinct difference. The salmon head can be cooked in curry just like curry fish head.

PS/ I checked Lee's Frozen website and they have both chilled and frozen salmon. My guess is they have both fillet and cutlet. Give it a try. icon_rolleyes.gif

Cold Storage is the easiest place to get. Also Isetan/Jusco is fairly fresh--guessing it is because they also need it for their packaged sushi sections.

due to the recent earthquake , i skipped salmon for quite some time d , really craving for it , especially those sashimi sleep.gif , can try to look for it at hock choon ampang

Every year my uncle will hold a banquet for all of our relatives at Rakuzen the japanese restaurant. He will order a whole frozen salmon fish from the chef. The chef will fillet the salmon for sashimi while the skin used for tempura, and the rest goes into miso sukiyaki. Not sure if this kinda salmon you are looking for. Otherwise many groceries sell frozen salmon as well. Farm raised salmon are fed with pellets for its orange color but i guess that's still consider natural since all wild salmon also get their color from crustaceans.
