Yes the minimum grade for a stainless steel is 304, however thickness can be found from 0.8mm actually.

Both are a good brand which targeted to different group of consumer. Sorento is slightly more expensive than Mocha, hence the price will be slightly higher compared to Mocha, as the material used will be better. Sorento also offer 10years warranty on certain faucets, whereas Mocha offers 5years warranty. At the end of the day, it depends on what budget you have, and what type of products you are looking at.
