Perhaps you are in the wrong section. I believe the Musicians forum had better experts to answer your question. Anyway here are my comments.
The child's interest is the most important here. Children of this age had not acquired the ability to focus attention and concentrate for long periods (like one hour or 45 minutes - the shortest duration for music lessons). You need to rely on their interest to captivated them to last through the lesson.
You can theory only and dont learn any instruments. There are such courses available. Theory starts with identification of notation for the various notes. It also goes into duration of notes (eg how long a note is to be played). Maybe adult cant grasp this without instruments but not a child. They need the demo which comes for the music instruments.
