Flash Cyanogen's custom Eclair 2.1 ROM onto your G1. It is called Cyanogenmod-5 (see Resources). It has multi-touch enabled in the maps, gallery, and browser applications. Download the custom ROM's ZIP file onto your computer and copy it to the SD card of your G1 over the USB dongle. Unmount your phone and boot it in recovery mode. Select the option to flash the ZIP file from the menu list to flash the ROM with multi-touch enabled on it. Cyanogenmod-6, which is the ROM based around Froyo 2.2, also has multi-touch enabled.

Download "SuperEclair" V8.2 by superatmel to flash to your G1. SuperEclairV8.2 is also based around Eclair Android 2.1 and has multi-touch enabled in the gallery, maps and browser. Plug your phone into the computer and copy and paste the ZIP file onto your SD card. Unmount the phone and turn it off. Boot it by holding down the "Home" button and the "End" button simultaneously. Flash the ZIP file from the menu that comes up.

Use JesusFreke's "Cupcake" Android ROM version 1.51 on your G1. This ROM enables multi-touch as well as pinch-to-zoom on any application that supports it. Download it on your computer and copy and paste it onto the SD card on your G1. Boot your phone into recovery mode and flash the ROM onto your phone.
