What open source softwares do you use/recommended for running a web server and your reason if there is any ...

For mine:
Web server - Apache
FTP server - proftpd
DNS server - Bind
Mail server - not sure
POP3 server - not sure
IMAP server - not sure
Database server - MySQL

FTP - pure-ftpd (can't remember why I chose this)
DNS - djbdns (for being lightweight + simple configuration)
SMTP - Exim (for its flexible configuration, and integration with spamassassin and clamav)
POP3/IMAP4 - Courier (Maildir support)

my choices would be the following:
web server - apache 2.
ftp - don't use ftp much nowadays, stock ftpd that comes with open/freebsd is good enough for my limited usage.
dns - bind 9.
mta - postfix for big sites (virtual hosting), sendmail for everything else. good integration with amavis, clamav and spam assassin.
pop3/imap - dovecot and courier-imap. not much of a fan of cyrus-imapd.
db server - postgresql for serious kick-ass software development, mysql for everything else.
