Some achievements are quite hard to get on the first try or while doing the other achievements for the mission. What I would say to do is to play normally in the difficulty setting you find good for you. Then at the end you can redo all the missions you want in hard or whatever and get achievement there. Like you can redo the maps just to do the Hard achievement, easier this way. The only issue with this is that you cannot change the tech/armory choices you did so if you need some other choices to complete the campaign, you are screwed and need to redo the whole campaign.

I went to the hatcheries south-west personally, not so defended. There are 3 there, I killed them (do not kill all the drones), moved back a bit, waited 30 seconds and move back in, they are rebuilding one hatchery, destroyed it when it was still under construction and got achievement. It took me 3-4 tries to get my timing and economy start setup but it's not impossible  If you doing it for achievement, screw the initial base and bring all your troops with you.
