Yes, you can.
I am doing it for a lot of my games at the moment.
Restoring one by one.
So far my Metro 2033 and Supreme Commander 2 save games still intact.

So here's basicly how Steam works.
You bought the game, the game is yours, like FOREVER.
Those that did not use Steam Cloud, you need to backup the save-game or so.
Those that use Steam Cloud, you don't need to worry about backing up the save-game.
So you've decide to get Dawn of Discovery or Settlers7?
probably i'll be getting both.. dawn of discovery and also the settlers 7.. but I hope steam will put them on daily sales though.. fingers cross You bought the game, the game is yours, like FOREVER.

The best way to find out is, change to List View in Library and look for a "cloud" icon beside the Favourite column. Games which have the "cloud" icon is using Steam Cloud.
MW2, TF2, L4D2, Torchlight, CS:S are just a few games who use Steam Cloud.
good stuff cheesenium. thanks for the info MW2, TF2, L4D2, Torchlight, CS:S are just a few games who use Steam Cloud.
