on the A100, there's M, DMF, AF-C and AF-A (DMF being Direct Manual Focus - where you can use as auto mode, then when the camera locks focus, it will disengage its focusing gear so that you can tweak the focus point manually)
there's 4 on the A700 - M, AF-C, AF-S, AF-A
manual, continuous, single, auto (respectively)

From the way i see it, there could be 2 reasons. One, being the design on EF-S lens is suited for 1.6x.. The other one is coz Canon designs their own sensors as opposed to Nikon that subcontracts their sensor manufacturing to Sony. It could be their technology is optimized when using 1.6x crop.
