Yes, I also feel the UI doesn't look very impressive. Looks a bit like N900's interface, which also didn't impress me.
But if the camera is great, I don't really mind the GUI.

If you want a touch screen phone, I agree stay away from Nokia. But if you want a strong all-around phone, Nokia's models are still good. Based on your signature, I guess you're an Android user. I like Android, I really do (HTC Hero owner here). The problem is that they don't have a strong multimedia camera phone yet. Nexus 1, Desire... all these have normal 5MP cameras only.

Nokia N8: Hardware Is Gorgeous, But Crucial Software Disappoints
After seeing all these video clips, I have to agree. The software looks functional, but dull.

I've bought Nokia's previous camera phones (N82, N86), but right now quite in love with Android HTC's Sense UI. I think Nokia really needs to make their UIs look more cheerful.

Actually the iPhone 4 was only announced a few weeks before they started taking pre-orders. Today they have already started shipping. There are user reviews on YouTube.

Whereas Nokia announced the N8 very early in April. Yet today there isn't a retail version or and pre-orders.

Yeah, but it's too late to stop all those pre-orders now. Apple quite cunning, sell the phone before any official reviews come out and problems are detected.

At first N8's ratings at GSMArena were damn high, average around 8.9. Now fallen to 8.4. This is because more videos of people using pre-launch N8 prototypes surface, so people get a bad opinion. Whereas Apple keep their prototypes secret until launch day.

Nokia says this will be the last Symbian^3 phone. So the software is outdated even before the phone launches. I guess the only reason to buy this phone is the awesome hardware.
