Maybe Eiraku can provide the OC on demand type. Really nice, you can overclock as you want and go back to stock as you want. You can even configure your own settings and clock speed.
The overclock and restore to stock can be done via a touch of a button/widget on the desktop, sick!!!!!
You can also place a widget to show the CPU frequency (max) to know what's your clock speed set, like meLi Desktop.
I'm using Queen Beecon widget to do it, the process is pretty complicated and take some time to configure, and as Eiraku mentioned, it takes up more resources, so Eiraku method will be more easy on the resources:

My setup = 2 QB Widgets (cpu and rootfs) and 3 desktop shortcuts with custom icons. Very shimple, but one touch can go to whatever speed you want to set, all thanks to Titan's new and easy to use kernel-config app.
But nowadays my 750 starving edi enough for most tasks actually,
Still, what aspire said does have it merits, for one my way requires you to be comfy with editing system files, and forever taking the risk of botching up. Though I will provide the needed files to make it more a cut paste job.
A screenie preview, see those three UP DOWN CIRCLE shortcuts (OC, UC and Stock respectively)?
Had widgets for disk and mydocs space too, but I found that too many QBWs lag up the phone and locks desktop up after a while.
