Yeah, I recently upgraded mine to 16GB. There is a topic here which has already addressed this but generally this is what I did.
1. Backup - Titanium, nandroid, sync with google contacts, export to SD card, wavesecure (if really paranoid) - however, I was not able to backup my sms from all the above i think.
2. Take out the old SD card, connect to your pc, and transfer everything to PC.
3. Slot in new SD card to N1, reformat (partition size will depend on whether you are on 2.1 or 2.2 - do a quick search in this forum) using Recovery.
4. Take out the new SD card, connect it to your pc, and transfer only Titanium Backup, nandroid, DCIM and mp3 folder. Copy the vcf contact file also just in case.
5. Might as well wipe cache, da cache, batt stats, but this would be optional.
5. Slot back new SD card to N1. Use Titanium backup to restore only Applications + Data and not system entries. Use Apps2Sd to move apps to Internal or SD storage.
6. Put old SD card on ebay.
Some have reported that first time boot on new SD card may take a while because cache table is being rebuilt. But on mine, it took just slightly longer than a normal boot.
