1. Not qualified to answer as I'm not a raiding hunter. My hunter is my farmer and pot maker
2. If you want quick money, then any gathering profession will do; herbalism, skinning or mining. Enchanting and jewelcrafting is only good if you invest in them to get the high level recipes or lucky enough to get recipes from mobs in instances/raids. If you want to make your own gear, then go for leatherworking. As there is a limit to 2 professions max at a time, you can either take two gathering profession, or for a hunter, take skinning and leatherworking.
Skinning to get the materials to level leatherworking, and leatherworking to craft your own armor at higher levels. Other combinations you may want to consider is herbalism and alchemy, gather herbs then make your own pots.
3. Race for a rogue, depends what you're looking for. All classes are the same, it's the races that brings extra dimensions. E.g. human has perception, so makes it easier for you to find stealthed targets, gnomes have escape artist which makes them immune to trapping effects (iirc), etc. Check up the race's racial ability and you can decide from there.
Ok, I see what you mean with skinning and leatherworking, combined, I can source my own leather and make my own clothes. Just like herbalism and alchemy to make pots. THank you for the clarification.
