Turn of Brake Assist in the gameplay menu, if i'm not mistaken..

and about that high speed slide.. well i get that all the time; just have to slow down until you feel the car is turning the way you want (assuming u have the racing line off)

with the racing line on, my style with my MOMO is i release throttle when near a corner, apply brake slightly in the yellow region and stomp it hard when it's red (ABS on).

practice, practice and more practice bro... just practice until you find the driving style that suits you most..
