A couple of reason one being CPU-z unable to detect your mobo properly and can't determine the exact ram configany method to confirm i am running dual channel?
Your laptop don't support dual channel, but i doubt it

Temperature depends on games/application you run. Some game/apps tax GPU more than others. Run FurMark, that will cook your GPU nicely 
Not advisable to be done as you also may stress tiny components inside the laptop that might not withstand the heat...
