Do a backup, then wipe the handheld, then restore all except those items you don't want.

wipe the handheld, then restore all? I don't understand that part...from the phone it self or from the computer..?

Depends on your purpose of deleting, either to delete everything and restore to factory setting (wipe hand held), or just delete contacts/messages.
