You can't do much about those 7 SMS being sent as MMS instead.
However, I found out that after you have inserted recipients and you modify it again (add or delete), after that it will automatically converted to "Group MMS".

Tip : Turn OFF "MMS" before you compose and send any multiple recipients message (Yes, it's tedious)

Well, press home + power button for 15 to 20 seconds.
If not sure what problem , try charge about 30 minutes and see...

no way to check. but if you are paranoid, you can opt for the "force quit" feature.

hold the top right power button until "slide to power off" comes up. release the power button and proceed to hold the home button until it springs back.

If your iPhone is jailbroken, you could free memory using SB Settings under Processess. And you can install Power Tools from Cydia for respringing or rebooting.
