Yes, a banana plug is that little gold thingy that connects to your bare cable wires.
There are various designs out there, not sure if all will fit any size cable. How thick a wire are you using (look for the AWG rating)?

If you never open A-C then can consider putting your screen there. If there is a curtain track from A-C then suggest you hang a thick, black curtain there. Helps to cut down light from outside and the black curtain is an effective background for the screen.
Surround speakers don't necessarily have to be mounted at ear height. In fact many recommend them be mounted 2-3 feet above ear height.

Projector distance depends on how big a screen you want. In general the bigger the screen the further back the projector.

If you're going with a large screen (say above 100") then you may want to consider full HD projector. The higher resolution of full HD will result in sharper pictures, especially for large screen.
Yup, you might need to mount the screen from the ceiling or custom make a partition to hang the screen (like hanging a painting). Are you planning to use a fixed screen?
Yes, long video wires can be bought. I suppose you are using HDMI cable to connect to projector? It's possible to buy 10m length locally. If you need longer, see:
