If the application you used are with push notification or will load any content of internet (e.g. mail, safari, youtube etc) you will be charge for the amount of data you used.
Best solution for you is to get data plan add-on or call Maxis to disable cellular data for your account.

p.s. No offence, but I still can't get it why some ppl can use iPhone without any access to internet or subsribe to data plan
internet connectivity is required in order to maximise the usage of these smart phones (i.e. iPhone, Android, Blackberry, WebOS and etc)
Please do some research before jumping on this platform just because it is cool
