First of all as a hardcore gamers (eventhough my age almost double most of forumner here ) , my workstation will always be a M$ Windows. But as usual will be equipped with vmware or virtual box.

Debian - Clone Server Cum Thin Client Server (diskless) (entry level setup with clonezilla)
Ubuntu - Thin Client Server (stateless LTSP)
Ubuntu - Intranet Web Application Server(LAMP)(entry lebel setup)
Ubuntu - DHCP + Router + Firewall + Squid (entry level setup) (now converted to clark connect (community) more powerful and user friendly)
Ubuntu - Samba Sever yang aku intergrate dgn CMS dalam WAMP Server (win2k @ my first Web Server)
Centos - Internet Web Server (LAMP)
Morphix - Wifi Hot Spot System (ZoneCD maaaaaa)(entry level setup)

Really appreciate if ur alls can add others function that we can do with Linux. (i found out clark connect thru this type of thread that I opened in other forum)
