can try out searching for kernel customization/complilation, creating the img file and emulate on qemu (MIPS, ARM etc), try google around (keyword: free-electrons), depending on what application your embedded project will be. Flashing your home router and ipod/iphone will you get some hands-on experience with embedded linux..

Is it something like this that you want to achive ?

http://blog.namran.net/2007/11/17/arms-embedded-test/

or something more useful like

this one..

http://automon.donaloconnor.net/

depend..

if you're rich and willing to spend a huge amount..
can try order development kit from ..

http://www.embeddedarm.com/

Otherwise can try .. more cheaper device first such as installing tomato linux into some router
for example WRT 54L..

Good luck.. ~
