a virus on ps3 would mean that unsigned code can run on the PS3's OS. Which means the PS3 has been hacked. Which is quite not straightforward to do since its seriously protected with several layer of encryption and even with dedicated SPE keeping guard over the system. Sure hackers tried to run retail copies but so far is unsuccessful.
Add that with constant updates from sony to make sure it stays that way, and you have a nearly unbreakable security system. They learnt their mistake from the PSP.
As much as I'd like to share your optimism, I wouldn't think that the PS3 would be unhackable. It's a race between the Sony devs and the hackers you see. Once the hackers get a step ahead of the devs, lets say by finding a good exploit, the whole system will be open to them. Furthermore, the exploit doesn't even have to be internal, it could be from a game. Some game dev's might get lazy to check for openings in their code, and this could snowball into the inevitability of a hacked console.
However, I still remain hopeful that the PS3's security lasts as long as possible... we don't need piracy damaging Sony's competitiveness at the moment.
